Easy Garlic Aioli — A quick garlic aioli made with mayonnaise, fresh garlic and lemon Save to Pinterest

This shortcut aioli starts with good mayonnaise, so there are no raw eggs to whisk and no risk of the sauce splitting. Fresh garlic, lemon juice and a little olive oil give it the bold, rounded flavor of a classic aioli.

Grate the garlic on a microplane instead of chopping it: it melts into the sauce and spreads its flavor evenly. A short rest in the fridge softens the raw garlic bite.

Ingredient substitutions

  • Lemon juice → white wine vinegar
  • Fresh garlic → 1/2 tsp garlic powder (milder, less punchy)
  • Half the mayonnaise → plain Greek yogurt for a lighter, tangier version

Flavor variations

  • Chipotle aioli: stir in 1 tsp minced chipotle in adobo.
  • Herb aioli: add 2 tbsp chopped parsley, dill or basil.
  • Roasted garlic aioli: replace raw garlic with 4–5 cloves of roasted garlic.

Tips and troubleshooting

  • Start with 1 garlic clove if you prefer a milder sauce; you can always add more.
  • Use a mayonnaise you enjoy on its own, since it is the base of the flavor.

Storage and food safety

  • Keep in an airtight container in the refrigerator for up to 4 days.
  • Do not leave it at room temperature for more than 2 hours.

What to serve it with

  • Fries and potato wedges
  • Burgers and sandwiches
  • Roasted vegetables and grilled fish
